Ingredients

  • 1/2 pound ground beef
  • 1/2 cup onion, diced
  • 1/2 cup celery, diced
  • 1 cup carrots, diced
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon freshly ground black pepper
  • 3 cups beef broth
  • 1 cup dried lentils
  • 1 can (14.5-ounce) diced tomatoes
  • 1 bay leaf

Directions

  1. In a large pot, cook the ground beef over medium heat until it is no longer pink. Drain any fat.
  2. Add the onion, celery, carrots, garlic powder, oregano, thyme, and black pepper. Cook for 5 minutes, stirring occasionally.
  3. Add the beef broth, lentils, tomatoes, and bay leaf. Bring to a boil, then reduce the heat to low and simmer for 30 minutes.
  4. Discard the bay leaf and serve hot.
