Steamed Vegan Rice Cakes (Banh Bo Hap)

Ingredients

  • 2 cups of sticky rice
  • 1/2 cup of vegan sugar
  • 1 teaspoon of salt
  • 2 tablespoons of oil

Directions

  1. Soak the sticky rice for 4-6 hours in cold water.
  2. Drain and rinse the rice. Place in a pot with 2 cups of fresh water.
  3. Bring to a boil, reduce heat to low and cover. Cook for 10-15 minutes or until the water is fully absorbed.
  4. Add the vegan sugar and salt. Stir the mixture until all the ingredients are fully combined.
  5. Spread the oil in a parchment-lined steamer tray.
  6. Divide the rice mixture into 8-10 portions and shape into balls. Place the balls in the steamer tray.
  7. Steam for 15-20 minutes or until the cakes are cooked through.
  8. Serve warm and enjoy!
