Ingredients

  • 4 boneless chicken breasts
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons butter
  • 1/2 cup sliced mushrooms
  • 1/2 cup white wine (or chicken broth)
  • 1/2 cup heavy cream
  • 2 tablespoons fresh parsley, chopped

Directions

  1. In a shallow bowl, combine the flour, salt, and pepper.
  2. Dredge each chicken breast in the flour mixture to coat.
  3. In a large skillet, melt the butter over medium-high heat. Add the chicken to the skillet and cook until lightly browned and cooked through, about 5 minutes per side.
  4. Remove the chicken from the skillet. Add the mushrooms to the skillet and cook until lightly browned, about 3 minutes.
  5. Add the white wine (or chicken broth) to the skillet and bring to a simmer. Simmer for 3 minutes, scraping up any browned bits from the bottom of the skillet.
  6. Add the cream to the skillet and stir to combine. Return the chicken to the skillet and simmer for 5 minutes, until the sauce has thickened.
  7. Garnish with parsley and serve.
