Ingredients

  • 1/2 cup lemon juice
  • 1/2 cup white sugar
  • 1 teaspoon grated lemon zest
  • 1 (8-ounce) package cream cheese, softened
  • 1/2 cup heavy cream, whipped
  • 1/4 cup confectioners' sugar
  • Fresh mint sprigs (optional)

Directions

  1. In a small saucepan, combine lemon juice, white sugar, and lemon zest. Heat over medium-low heat, stirring constantly, until sugar is dissolved.
  2. Remove from heat and cool. In a large bowl, beat cream cheese until smooth. Gradually beat in cooled lemon mixture.
  3. In a separate bowl, beat heavy cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture.
  4. Fold in confectioners' sugar. Pour mousse into individual serving dishes. Chill in refrigerator for at least 2 hours.
  5. Garnish with fresh mint sprigs, if desired, and serve.
