Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced red bell pepper
  • 1 jalapeno, seeded and diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1/4 cup tomato sauce
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro, for garnish

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion, bell pepper, jalapeno, and garlic. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes.
  2. Add the chili powder and rice and cook, stirring, for 1 minute.
  3. Add the chicken broth, tomato sauce, and salt and pepper to taste. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes.
  4. Remove the skillet from the heat and let stand, covered, for 10 minutes.
  5. Fluff the rice with a fork and garnish with cilantro before serving.
