2 large butternut squash, peeled and spiralized into noodles
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
Salt, to taste
1/4 cup freshly chopped cilantro
1/4 cup freshly chopped parsley
2 tablespoons freshly squeezed lemon juice
Directions
Preheat oven to 400 degrees F (200 degrees C).
Spread butternut squash noodles onto a large baking sheet. Drizzle with olive oil and season with garlic, cumin, smoked paprika, chili powder, garlic powder, onion powder, cayenne pepper, black pepper, and salt, to taste. Toss to combine.
Roast for 15-20 minutes, or until noodles are fork-tender.
Transfer noodles to a serving dish. Garnish with cilantro, parsley, and lemon juice.
