In a large skillet over medium heat, cook the beef, pork, chorizo, onion, bell pepper, and garlic until the meat is browned and the vegetables are tender. Drain off any excess fat.
Add the paprika, oregano, cumin, salt, and pepper; mix well.
Stir in the peas, corn, tomato sauce, and olives.
Transfer the mixture to a 9-inch pie plate.
Lay one sheet of puff pastry over the mixture. Trim the edges, and press down to seal.
Brush the top of the pastry with the beaten egg.
Bake for 15 minutes, or until the pastry is golden brown.
