In a large skillet, melt butter over medium heat. Add flour and stir until smooth. Gradually add wine and cream, stirring constantly. Add thyme, salt, and pepper.
Place sole fillets in a lightly greased 9x13 inch baking dish. Spoon crab mixture onto each fillet. Pour the cream sauce over the top.
Bake in preheated oven for 20 minutes, or until fish flakes easily with a fork.
