Ingredients

  • 1 ½ cups vanilla wafer crumbs
  • ½ cup unsalted butter, melted
  • 1 cup powdered sugar
  • ½ cup creamy peanut butter
  • 1 cup white chocolate chips
  • 1 tablespoon vegetable oil
  • Red food coloring
  • Blue food coloring
  • Green food coloring
  • Black food coloring
  • 20 small jelly-filled candies (such as orange or raspberry)
  • 20 miniature chocolate chips

Directions

  1. In a bowl, combine the vanilla wafer crumbs and melted butter. Mix well until the crumbs are moistened.
  2. Add the powdered sugar and creamy peanut butter to the bowl. Stir until all the ingredients are well combined.
  3. Take out small portions of the mixture and shape them into small balls, similar to the size of an eyeball. Place them on a lined baking sheet.
  4. In a microwave-safe bowl, melt the white chocolate chips with vegetable oil. Stir until smooth.
  5. Divide the melted white chocolate into several small bowls. Add a few drops of red, blue, green, and black food coloring to each bowl and mix well. This will give you different colored eyeballs for a creepy effect.
  6. Using a fork, dip each peanut butter ball into the colored chocolate, allowing the excess to drip off. Place the coated balls back on the baking sheet.
  7. While the chocolate is still wet, press a small jelly-filled candy into the center of each ball to create the iris of the eyeball.
  8. Add a miniature chocolate chip on top of each jelly-filled candy to serve as the pupil.
  9. Repeat the process with the remaining peanut butter balls.
  10. Chill the spooky Halloween eyeballs in the refrigerator for about 30 minutes, or until the chocolate has set.
  11. Once set, remove the eyeballs from the refrigerator and let them come to room temperature before serving.
  12. Arrange the Spooky Halloween Eyeballs on a platter and serve them at your Halloween party or any spooky-themed event.
