1 (10 ounce) package frozen spinach, thawed and drained
1 (14 ounce) can diced tomatoes, drained
1 (15 ounce) can black beans, drained and rinsed
1 cup corn kernels
1 teaspoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheese
Directions
Preheat oven to 350 degrees F (175 degrees C).
Heat olive oil in a large skillet over medium heat. Add onion, garlic and bell peppers and cook until softened, about 5 minutes. Add spinach, tomatoes, black beans, corn, chili powder, cumin, salt and black pepper. Cook until heated through, about 5 minutes.
Spread the vegetable mixture into a 9x13 inch baking dish. Sprinkle with shredded cheese.
Bake in preheated oven until cheese is melted and bubbly, about 20 minutes.
