Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 (10 ounce) package frozen spinach, thawed and drained
  • 1 (14 ounce) can diced tomatoes, drained
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion, garlic and bell peppers and cook until softened, about 5 minutes. Add spinach, tomatoes, black beans, corn, chili powder, cumin, salt and black pepper. Cook until heated through, about 5 minutes.
  3. Spread the vegetable mixture into a 9x13 inch baking dish. Sprinkle with shredded cheese.
  4. Bake in preheated oven until cheese is melted and bubbly, about 20 minutes.
