Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Rinse the quinoa under cold water in a fine-mesh strainer to remove any bitterness.
  2. In a medium saucepan, bring the water to a boil. Add the quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed.
  3. Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork and transfer it to a large mixing bowl to cool.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to make the dressing.
  5. Add the chopped spinach, halved cherry tomatoes, sliced red onion, Kalamata olives, and crumbled feta cheese to the mixing bowl with the quinoa.
  6. Pour the dressing over the salad and toss gently to coat all the ingredients.
  7. Taste and adjust the seasoning if necessary.
  8. Serve the Spinach, Tomato, and Feta Quinoa Salad chilled or at room temperature. Enjoy!
