Ingredients

  • 1 sheet puff pastry
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1 egg, beaten

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Unfold the puff pastry sheet and place on a lightly floured surface.
  3. Roll out the pastry into a 12x14-inch rectangle.
  4. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until the onion is tender, about 5 minutes.
  5. Stir in the spinach, feta cheese, Parmesan cheese, nutmeg, salt, and pepper. Cook until the spinach is heated through, about 5 minutes.
  6. Spread the spinach mixture over the puff pastry rectangle, leaving a 1-inch border around the edges. Brush the edges of the pastry with the beaten egg.
  7. Roll up the pastry jelly-roll style and place on a baking sheet.
  8. Brush the pastry with beaten egg. Bake in preheated oven until golden brown, about 25 minutes.
  9. Let cool before serving.
