1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup crumbled feta cheese
1/4 cup grated Parmesan cheese
1/4 teaspoon ground nutmeg

Directions
Preheat oven to 375 degrees F (190 degrees C).
Unfold the puff pastry sheet and place on a lightly floured surface.
Roll out the pastry into a 12x14-inch rectangle.
Heat the olive oil in a large skillet over medium heat. Add the onion and garlic; cook and stir until the onion is tender, about 5 minutes.
Stir in the spinach, feta cheese, Parmesan cheese, nutmeg, salt, and pepper. Cook until the spinach is heated through, about 5 minutes.
Spread the spinach mixture over the puff pastry rectangle, leaving a 1-inch border around the edges. Brush the edges of the pastry with the beaten egg.
Roll up the pastry jelly-roll style and place on a baking sheet.
