1 (10-ounce) package frozen chopped spinach, thawed and drained
1 (15-ounce) container ricotta cheese
1 cup grated mozzarella cheese, divided
1/2 cup freshly grated Parmesan cheese, divided
1/4 teaspoon ground nutmeg
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 (26-ounce) jar marinara sauce
Directions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook manicotti shells according to package directions. Drain and set aside.
In a large bowl, combine spinach, ricotta cheese, 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese, nutmeg, garlic powder, salt, and pepper. Mix together until thoroughly combined.
Spoon cheese mixture into the manicotti shells and place in the prepared baking dish. Pour marinara sauce over top of filled shells.
Sprinkle remaining mozzarella and Parmesan cheeses over top of shells.
Bake for 25 minutes, or until cheese is melted and bubbly.
