Ingredients

  • 1 lb. boneless, skinless chicken tenders
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1/2 cup panko bread crumbs
  • 1/4 cup parmesan cheese, grated
  • 2 tablespoons lemon zest
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup fresh lemon juice

Directions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. In a shallow bowl, combine the flour, salt, pepper, garlic powder, and lemon zest.
  3. In a second bowl, beat the eggs with the lemon juice.
  4. In a third bowl, combine the panko bread crumbs and parmesan cheese.
  5. Dredge the chicken tenders in the flour mixture, then the egg mixture, and then the panko mixture, making sure each piece is evenly coated.
  6. Place the chicken tenders on the prepared baking sheet and bake for 18-20 minutes, until golden brown and cooked through.
