Ingredients

  • 1 tablespoon butter
  • 1/4 cup chopped onion
  • 1/4 cup flour
  • 1/2 teaspoon paprika
  • 2 cups chicken broth
  • 1/2 cup dry white wine
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 pound cooked shrimp
  • 1/2 pound cooked scallops
  • 1/2 pound cooked crabmeat
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons dry sherry

Directions

  1. Melt the butter in a large saucepan over medium heat. Add the onion and cook until softened, about 3 minutes.
  2. Add the flour and paprika and cook, stirring constantly, for 1 minute.
  3. Gradually add the chicken broth, stirring until the mixture is smooth. Add the wine, salt and cayenne pepper.
  4. Bring to a boil, reduce the heat and simmer for 15 minutes.
  5. Add the shrimp, scallops and crab and cook for 5 minutes.
  6. Stir in the parsley, cream, Parmesan cheese and sherry and cook for an additional 5 minutes.
  7. Serve hot.
