Ingredients
1 tablespoon butter
1/4 cup chopped onion
1/4 cup flour
1/2 teaspoon paprika
2 cups chicken broth
1/2 cup dry white wine
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
1/2 pound cooked shrimp
1/2 pound cooked scallops
1/2 pound cooked crabmeat
2 tablespoons chopped fresh parsley
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tablespoons dry sherry
Directions
Melt the butter in a large saucepan over medium heat. Add the onion and cook until softened, about 3 minutes.
Add the flour and paprika and cook, stirring constantly, for 1 minute.
Gradually add the chicken broth, stirring until the mixture is smooth. Add the wine, salt and cayenne pepper.
Bring to a boil, reduce the heat and simmer for 15 minutes.
Add the shrimp, scallops and crab and cook for 5 minutes.
Stir in the parsley, cream, Parmesan cheese and sherry and cook for an additional 5 minutes.
Serve hot.
