Ingredients

  • 1 cup cooked quinoa
  • 1 cup cooked chickpeas
  • 1 cup diced red bell pepper
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup chopped Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the quinoa, chickpeas, bell pepper, cucumber, tomato, olives, feta, parsley, and mint.
  2. In a small bowl, whisk together the oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the salad and toss to combine.
