- 1/2 cup chopped Kalamata olives

- 1/4 cup chopped fresh mint
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Directions
- In a large bowl, combine the quinoa, chickpeas, bell pepper, cucumber, tomato, olives, feta, parsley, and mint.
- In a small bowl, whisk together the oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the salad and toss to combine.
