Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 can (14.5 ounces) diced tomatoes
- 1 cup green lentils, rinsed
- 1 cup frozen peas
- 1 can (14 ounces) coconut milk
- Freshly chopped cilantro, for serving
Directions
- Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin, coriander, turmeric, ginger, paprika, cinnamon, cayenne, and salt and cook for 1 minute more.
- Add the tomatoes, lentils, peas, and coconut milk and bring to a simmer. Reduce the heat to low and simmer for 20 minutes, or until the lentils are tender.
- Serve with freshly chopped cilantro, if desired.
