Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup green lentils, rinsed
  • 1 cup frozen peas
  • 1 can (14 ounces) coconut milk
  • Freshly chopped cilantro, for serving

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, turmeric, ginger, paprika, cinnamon, cayenne, and salt and cook for 1 minute more.
  3. Add the tomatoes, lentils, peas, and coconut milk and bring to a simmer. Reduce the heat to low and simmer for 20 minutes, or until the lentils are tender.
  4. Serve with freshly chopped cilantro, if desired.
