Ingredients

  • 1 pound of your favorite vegan pasta
  • 1 red bell pepper, chopped
  • 1/2 cup of diced red onion
  • 1/2 cup of sliced black olives
  • 1/2 cup of crumbled vegan feta cheese
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of olive oil
  • 1 tablespoon of red wine vinegar
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried basil
  • Salt and pepper to taste

Directions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine the bell pepper, onion, olives, vegan feta, and parsley.
  3. In a small bowl, whisk together the olive oil, vinegar, garlic powder, onion powder, oregano, basil, salt, and pepper.
  4. Pour the dressing over the salad and stir to combine.
  5. Add the cooked pasta to the bowl and mix until everything is well coated with the dressing.
  6. Serve at room temperature or chilled.
