Ingredients
- 1 pound of your favorite vegan pasta
- 1 red bell pepper, chopped
- 1/2 cup of diced red onion
- 1/2 cup of sliced black olives
- 1/2 cup of crumbled vegan feta cheese
- 1/4 cup of chopped fresh parsley
- 1/4 cup of olive oil
- 1 tablespoon of red wine vinegar
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and pepper to taste
Directions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large bowl, combine the bell pepper, onion, olives, vegan feta, and parsley.
- In a small bowl, whisk together the olive oil, vinegar, garlic powder, onion powder, oregano, basil, salt, and pepper.
- Pour the dressing over the salad and stir to combine.
- Add the cooked pasta to the bowl and mix until everything is well coated with the dressing.
