Ingredients

  • 1 tablespoon of olive oil
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 1 pound of mushrooms, sliced
  • 1 red bell pepper, chopped
  • 1 carrot, sliced
  • 1 cup of cooked brown rice
  • 1 tablespoon of soy sauce
  • 1 teaspoon of sesame oil
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook for 2-3 minutes, until the onion is softened.
  2. Add the mushrooms, bell pepper, and carrot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  3. Add the cooked brown rice, soy sauce, and sesame oil to the skillet and stir to combine. Cook for 2-3 minutes, until the rice is heated through.
  4. Season with salt and pepper, to taste. Serve immediately.
