Ingredients

  • 2 lbs mussels, debearded and cleaned
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 cup white wine
  • 2 cups vegetable or chicken stock
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Directions

  1. In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 3-4 minutes, stirring often.
  2. Add the curry powder and stir to combine. Cook for an additional 1-2 minutes.
  3. Add the white wine and bring to a simmer. Add the mussels and stock, cover and simmer for 5-7 minutes, until the mussels have opened.
  4. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 2-3 minutes, until the sauce has thickened.
  5. Serve hot with crusty bread.
