Ingredients
2 lbs mussels, debearded and cleaned
2 tablespoons olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 tablespoons curry powder
1 cup white wine
2 cups vegetable or chicken stock
1/2 cup heavy cream
Salt and pepper to taste
Directions
In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 3-4 minutes, stirring often.
Add the curry powder and stir to combine. Cook for an additional 1-2 minutes.
Add the white wine and bring to a simmer. Add the mussels and stock, cover and simmer for 5-7 minutes, until the mussels have opened.
Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 2-3 minutes, until the sauce has thickened.
Serve hot with crusty bread.
