1 package of ramen noodles (discard the flavor packet)
1/4 cup sesame oil
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon honey
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1/4 teaspoon red pepper flakes
2 cups shredded carrots
2 cups thinly sliced bell peppers
1/2 cup sliced green onions
1/4 cup sesame seeds
Salt and pepper to taste
Directions
Cook the ramen noodles according to the package instructions. Drain and rinse with cold water.
In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, garlic powder, ground ginger, and red pepper flakes. Set aside.
In a large bowl, combine the cooked noodles, carrots, bell peppers, green onions, and sesame seeds. Pour the dressing over the salad and toss to combine.
Season with salt and pepper to taste.
Serve immediately.
