1 head of bok choy, washed and cut into bite-sized pieces
1 cup shredded carrots
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon honey
1 tablespoon soy sauce
1/4 teaspoon black pepper
1/4 cup chopped cilantro
1/4 cup chopped green onions
Directions
In a large bowl, combine the bok choy, carrots, sesame oil, rice vinegar, ginger, garlic, honey, soy sauce, and black pepper. Mix until all ingredients are well combined.
Transfer the salad to a serving bowl and top with cilantro and green onions.
Serve immediately.
