Ingredients

  • 1 head of bok choy, washed and cut into bite-sized pieces
  • 1 cup shredded carrots
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions

Directions

  1. In a large bowl, combine the bok choy, carrots, sesame oil, rice vinegar, ginger, garlic, honey, soy sauce, and black pepper. Mix until all ingredients are well combined.
  2. Transfer the salad to a serving bowl and top with cilantro and green onions.
  3. Serve immediately.
