Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 jalapeños, seeded and finely chopped
  • 1 red bell pepper, seeded and finely chopped
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1 (4 ounce) can diced green chiles
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, until onion is softened, about 5 minutes.
  2. Add the jalapeños and bell pepper and cook, stirring, for 5 minutes.
  3. Stir in the tomatoes, green chiles, cumin, chili powder, salt, and pepper and bring to a boil. Reduce the heat and simmer, stirring occasionally, for 10 minutes.
  4. Remove from the heat and let cool before serving.
