Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1 (28 oz) can crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 teaspoon sugar
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
  2. Add the chili powder, paprika, cumin, and cayenne pepper, and cook for 1 minute more.
  3. Add the crushed tomatoes, vegetable broth, and sugar. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  4. Season with salt and pepper, to taste.
  5. Serve warm.
