Ingredients

  • 2 pheasant breasts, cut into chunks
  • 1 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 large egg, lightly beaten
  • 1/2 cup buttermilk
  • 1 cup vegetable oil, for frying
  • Salt, to taste

Directions

  1. In a shallow dish, combine the flour, paprika, garlic powder, onion powder, black pepper, and cayenne pepper. Mix until combined.
  2. In a separate bowl, whisk together the egg and buttermilk.
  3. Dip the pheasant chunks in the egg and buttermilk mixture, then coat in the flour mixture. Make sure to coat all sides of the pheasant.
  4. Heat the oil in a large skillet over medium-high heat until it reaches 350°F.
  5. Add the pheasant chunks to the hot oil and fry for 3-4 minutes per side, or until the pheasant is golden brown and cooked through.
  6. Remove the pheasant from the oil and transfer to a plate lined with paper towels to absorb any excess oil. Sprinkle with salt, to taste.
