Ingredients

  • 2 bunches of kale, cut into thin strips
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese (optional)

Directions

  1. In a large bowl, combine the kale, olive oil, apple cider vinegar, sea salt, and black pepper. Massage the kale with your hands until it is evenly coated with the dressing.
  2. Add the almonds, cranberries, and feta cheese (if using) and mix until everything is evenly distributed.
  3. Serve and enjoy!
