Ingredients

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, cut into 1-inch pieces
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the sausage and cook until browned, about 5 minutes.
  2. Add the onion, bell pepper, garlic, Italian seasoning, salt, and pepper and cook until the vegetables are softened, about 5 minutes.
  3. Stir in the broth, tomatoes, and spinach and bring to a simmer. Simmer until the sauce is thickened, about 10 minutes.
