Chicken and Artichoke Penne with a White Sauce

Ingredients

  • 1 lb chicken breast, diced
  • 1 can artichoke hearts, drained and chopped
  • 1 cup chicken broth
  • 1/2 cup white wine
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 cup parmesan cheese, grated
  • 1 lb penne pasta

Directions

  1. In a large skillet over medium heat, melt butter and add diced chicken. Cook until lightly browned.
  2. Add artichoke hearts and cook for an additional 3 minutes.
  3. Add chicken broth, white wine, garlic powder, and Italian seasoning. Bring to a simmer and cook for 5 minutes.
  4. In a separate bowl, whisk together the butter and flour to make a roux. Slowly add the roux to the skillet, stirring constantly.
  5. Add heavy cream and stir until thickened. Reduce heat to low and add parmesan cheese, stirring until melted.
  6. Bring a pot of water to a boil and add penne pasta. Cook for 10 minutes or until al dente.
  7. Drain pasta and add to the skillet. Stir to combine and cook for an additional 5 minutes.
  8. Serve hot and enjoy!
