Ingredients

  • 1 pound tilapia fillets, cut into 1” cubes
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup mayonnaise
  • 2 tablespoons freshly chopped parsley
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs
  • 1/4 cup olive oil

Directions

  1. In a medium bowl, combine the tilapia cubes, feta cheese, mayonnaise, parsley, black pepper, and cayenne pepper. Mix until well-combined.
  2. In a shallow dish, combine the flour and breadcrumbs. Mix until well-combined.
  3. Form the tilapia mixture into 8 patties and dredge each patty in the flour-breadcrumb mixture, coating both sides.
  4. Heat the olive oil in a large skillet over medium heat. Add the patties and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  5. Serve the patties warm with your favorite side dish.
