Ingredients

  • 4 eggs
  • 1 tablespoon of black tea leaves
  • 1 teaspoon of Sichuan peppercorns
  • 2 tablespoons of soy sauce
  • 2 teaspoons of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of five-spice powder
  • 1/2 teaspoon of ground ginger
  • 2 tablespoons of cooking oil

Directions

  1. Bring a pot of water to a boil and gently lower the eggs into the boiling water.
  2. Reduce the heat to low and let the eggs cook for 10 minutes.
  3. Remove the eggs from the heat and let them cool completely.
  4. Once cooled, gently crack the eggs and peel them.
  5. In a bowl, mix together the black tea leaves, Sichuan peppercorns, soy sauce, sugar, salt, five-spice powder, and ground ginger.
  6. Place the eggs in the bowl and mix until they are completely coated in the mixture.
  7. Heat the oil in a pan over medium heat and add the eggs to the pan.
  8. Fry the eggs for 5 minutes, until the mixture is lightly browned and crisp.
  9. Serve the tea leaf eggs warm.
