Spicy Goat Curried Rice Pilaf

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon black pepper
  • 1 pound ground goat meat
  • 1/2 cup green peas, frozen
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup fresh cilantro, chopped

Directions

  1. Heat oil in a large saucepan over medium heat.
  2. Add onion and garlic, and cook until softened, about 5 minutes.
  3. Add ginger, garam masala, chili powder, coriander, cumin, turmeric, and black pepper and cook for another minute.
  4. Add goat meat and cook until it is no longer pink, about 10 minutes.
  5. Add green peas and rice and stir to combine.
  6. Pour in chicken broth and bring to a boil.
  7. Reduce heat to low, cover, and simmer for 20 minutes, or until all of the liquid has been absorbed.
  8. Remove from heat and fluff with a fork. Stir in cilantro.
