Ingredients

  • 1/4 cup vegetable oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 (16 ounce) packages frozen lima beans
  • 4 cups vegetable broth
  • 2 potatoes, diced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the oil in a large pot over medium heat. Saute the onion and garlic until the onion is translucent.
  2. Stir in the lima beans and vegetable broth. Bring to a boil, then reduce heat to low.
  3. Add the potatoes, thyme, oregano, salt, and pepper. Simmer for 20 minutes.
  4. Stir in the parsley, and simmer for 5 minutes longer.
  5. Serve hot.
