Ingredients

  • 3 cups cooked ham, diced
  • 2 pounds potatoes, peeled and cubed
  • 1 onion, diced
  • 1/2 cup butter, melted
  • 1/2 cup all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups shredded cheddar cheese, divided

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine ham, potatoes, and onion.
  3. In a medium saucepan, melt butter over medium heat. Stir in flour until smooth. Gradually stir in milk, salt, and pepper. Bring to a boil, stirring constantly. Boil for 1 minute, or until thickened. Remove from heat and stir in 1 cup of cheese.
  4. Pour cheese sauce over ham and potato mixture and stir to combine. Pour into a 9x13 inch baking dish.
  5. Bake for 30 minutes, or until potatoes are tender. Sprinkle with remaining 1 cup of cheese and bake for an additional 5 minutes, or until cheese is melted.
