Ingredients

  • 1 ½ pounds stew beef
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 can (14.5 ounces) diced tomatoes
  • 2 cups beef broth
  • 1 teaspoon sugar
  • 1 large sweet potato, peeled and diced
  • 1 large carrot, peeled and diced
  • 1 cup frozen peas

Directions

  1. Heat the oil over medium-high heat in a large Dutch oven or heavy-bottomed pot. Add the beef and brown for 5 minutes, stirring to break up the chunks.
  2. Add the onion, garlic, cumin, coriander, paprika, salt and pepper and cook for an additional 2 minutes, stirring to combine.
  3. Add the tomatoes, beef broth, and sugar and bring to a boil. Reduce the heat to medium-low and let simmer for 20 minutes.
  4. Add the sweet potato, carrot, and peas and simmer for an additional 15 minutes, or until the vegetables are tender.
  5. Serve with crusty bread and enjoy!
