Ingredients

  • 1 cup black-eyed peas, soaked overnight
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon pepper
  • 1 teaspoon salt
  • 1/2 cup water
  • Oil for frying

Directions

  1. Drain and rinse the soaked peas.
  2. In a medium bowl, whisk together the flour, garlic powder, onion powder, pepper, and salt.
  3. Gradually add the water and whisk until the mixture is thick and smooth.
  4. Add the black-eyed peas and stir to coat.
  5. Heat oil in a large skillet or deep fryer to 350°F.
  6. Drop the peas in batches into the hot oil and cook for 3-4 minutes until golden and crispy.
  7. Remove from the oil and drain on paper towels.
  8. Serve warm with your favorite dipping sauce.
