Spicy and savory Instant Pot Chilorio

Instant Pot Chilorio is a traditional Mexican dish made with tender and flavorful pork cooked in a spicy chili sauce. This easy Instant Pot version cuts down on the cooking time while still delivering a delicious and authentic taste.

Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 3 ancho chilies, stemmed and seeded
  • 3 guajillo chilies, stemmed and seeded
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp cinnamon
  • 1/2 cup apple cider vinegar
  • 1/2 cup orange juice
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Directions

  1. In a blender, combine the ancho chilies, guajillo chilies, onion, garlic, cumin, oregano, cinnamon, apple cider vinegar, and orange juice. Blend until smooth.
  2. Season the pork chunks with salt and pepper.
  3. Turn on the Instant Pot to sauté mode and heat the vegetable oil.
  4. Add the seasoned pork chunks and brown them on all sides.
  5. Pour the chili sauce over the pork in the Instant Pot.
  6. Close the lid, set the vent to sealing, and cook on high pressure for 30 minutes.
  7. Once the cooking time is up, let the pressure release naturally for 10 minutes, then do a quick release.
  8. Shred the pork using two forks and mix it with the sauce in the Instant Pot.
  9. Serve the Instant Pot Chilorio with rice, tortillas, or as a filling for tacos.
