  • 1 zucchini, diced
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (optional for extra heat)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Directions

  1. Rinse the millet thoroughly under cold water and drain well.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, minced garlic, and a pinch of salt. Sauté until the onion turns translucent.
  3. Add the diced red bell pepper, carrot, and zucchini to the pot. Cook for about 5 minutes, stirring occasionally.
  4. Add the curry powder, cumin, turmeric, paprika, and cayenne pepper (if using) to the pot. Stir well to coat the vegetables with the spices.
  5. Add the rinsed millet and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer for 15-20 minutes or until the millet is tender and the liquid is absorbed.
