This Americanized version of mapo tofu is a quick and easy recipe that retains all the spicy, savory flavors of the traditional dish. Made in the microwave, it's perfect for busy weeknights when you want a homemade meal without spending hours in the kitchen.
Ingredients
- 1 block of firm tofu, diced
- 1/2 pound ground pork
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons hoisin sauce
- 1 tablespoon chili garlic sauce
- 1/2 cup chicken broth
- 1 tablespoon cornstarch
- 2 green onions, sliced
- Cooked white rice, for serving
Directions
- Place the diced tofu in a microwavable dish and microwave on high for 3 minutes.
- In a separate microwavable dish, combine the ground pork, garlic, and ginger. Microwave on high for 5 minutes, breaking up the pork halfway through.
- Add the soy sauce, hoisin sauce, chili garlic sauce, and chicken broth to the pork mixture. Microwave on high for another 2 minutes.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry. Stir the slurry into the pork mixture and microwave for an additional 2 minutes, or until the sauce has thickened.
- Gently fold in the diced tofu and half of the sliced green onions. Microwave on high for 1 minute.
- Serve the mapo tofu hot over cooked white rice, garnished with the remaining green onions.
- Enjoy your homemade mapo tofu made in the microwave!
