Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced

  • 1 can diced tomatoes
  • 1 tsp ground cumin

  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Sour cream (optional, for serving)
  • Tortilla chips (optional, for serving)

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, and cook until the onion is translucent, about 5 minutes.
  3. Stir in the minced chipotle pepper and cook for another minute.
  4. Add the chicken cubes to the pot and cook until they are no longer pink in the center, about 5 minutes.
  5. Pour in the chicken broth and diced tomatoes, and add the cumin, chili powder, dried oregano, salt, and black pepper. Stir well to combine.
  6. Bring the soup to a boil, then reduce the heat to low and let it simmer for 15 minutes.
