Ingredients

  • 4 jalapeno peppers
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 2 pounds potatoes, peeled and diced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the jalapeno peppers on a baking sheet and roast them in the oven for 15-20 minutes, or until the skins are charred.
  3. Remove the peppers from the oven and let them cool. Once cooled, remove the stems and seeds, then chop the peppers.
