This hearty and flavorful chicken chili is a crowd-pleaser and perfect for cozy nights in or festive gatherings. Packed with protein and veggies, it's a wholesome meal that will satisfy everyone's taste buds.

Ingredients

  • 1 lb. boneless, skinless chicken breasts, diced
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 can (14 oz) kidney beans, drained and rinsed
  • 1 can (14 oz) corn, drained
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) tomato sauce
  • 1 cup chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado

Directions

  1. In a large pot, cook diced chicken until no longer pink. Remove from pot and set aside.
  2. In the same pot, sauté onion and bell pepper until tender.
  3. Add cooked chicken back to the pot, along with beans, corn, diced tomatoes, tomato sauce, chicken broth, chili powder, cumin, garlic powder, salt, and pepper.
  4. Simmer on low heat for 30 minutes, stirring occasionally.
  5. Serve hot with your favorite toppings.
