Ingredients
- 1 lb. boneless, skinless chicken breasts, diced
- 1 onion, diced
- 1 red bell pepper, diced
- 1 can (14 oz) black beans, drained and rinsed
- 1 can (14 oz) kidney beans, drained and rinsed
- 1 can (14 oz) corn, drained
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) tomato sauce
- 1 cup chicken broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro, avocado
Directions
- In a large pot, cook diced chicken until no longer pink. Remove from pot and set aside.
- In the same pot, sauté onion and bell pepper until tender.
- Add cooked chicken back to the pot, along with beans, corn, diced tomatoes, tomato sauce, chicken broth, chili powder, cumin, garlic powder, salt, and pepper.
- Simmer on low heat for 30 minutes, stirring occasionally.
- Serve hot with your favorite toppings.
