This Cajun Cassoulet combines the rich flavors of smoked sausage, tender chicken, hearty beans, and spicy seasonings in a comforting one-pot meal. Using the Instant Pot cuts down on the cooking time without sacrificing any of the delicious flavors.

Ingredients

  • 1 lb smoked sausage, sliced
  • 1 lb boneless, skinless chicken thighs, cut into chunks
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (15 oz) red kidney beans, drained and rinsed
  • 1 cup chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tsp thyme
  • Salt and pepper to taste
  • Cooked rice, for serving
  • Chopped parsley, for garnish

Directions

  1. Set the Instant Pot to 'Saute' mode and add the sausage slices. Cook until browned, then remove and set aside.
  2. Add the chicken to the pot and brown on all sides. Remove and set aside.
  3. Add the onion, bell pepper, celery, and garlic to the pot. Saute until softened.
  4. Stir in the diced tomatoes, beans, chicken broth, Cajun seasoning, thyme, salt, and pepper.
  5. Return the sausage and chicken to the pot. Close the lid and set to 'Manual' for 15 minutes.
  6. Let the pressure release naturally for 10 minutes, then carefully quick release any remaining pressure.
  7. Serve over cooked rice and garnish with chopped parsley.
