Ingredients
- 1 lb smoked sausage, sliced
- 1 lb boneless, skinless chicken thighs, cut into chunks
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 cup chicken broth
- 1 tbsp Cajun seasoning
- 1 tsp thyme
- Salt and pepper to taste
- Cooked rice, for serving
- Chopped parsley, for garnish
Directions
- Set the Instant Pot to 'Saute' mode and add the sausage slices. Cook until browned, then remove and set aside.
- Add the chicken to the pot and brown on all sides. Remove and set aside.
- Add the onion, bell pepper, celery, and garlic to the pot. Saute until softened.
- Stir in the diced tomatoes, beans, chicken broth, Cajun seasoning, thyme, salt, and pepper.
- Return the sausage and chicken to the pot. Close the lid and set to 'Manual' for 15 minutes.
- Let the pressure release naturally for 10 minutes, then carefully quick release any remaining pressure.
- Serve over cooked rice and garnish with chopped parsley.
