Ingredients
- 1 rack of lamb
- 3 tablespoons olive oil
- 1 teaspoon sea salt
- 1 teaspoon ground black pepper
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon ground coriander
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh mint, chopped
- 2 tablespoons fresh lemon juice
Directions
- Preheat oven to 375°F (190°C).
- Pat the rack of lamb dry with paper towels.
- In a small bowl, mix together the salt, pepper, cumin, oregano, garlic powder, thyme and coriander.
- Rub the spice mixture onto the rack of lamb and place it in a roasting pan.
- Drizzle with the olive oil and roast in the preheated oven for 25-30 minutes, or until the lamb is cooked to your desired doneness.
- Meanwhile, in a small bowl combine the cilantro, mint, lemon juice, and a pinch of salt.
- When the lamb is cooked, remove from the oven and let rest for 10 minutes before serving.
- Serve with the cilantro-mint sauce.
