Ingredients
1 rack of lamb
3 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 teaspoon garlic powder

Directions
Preheat oven to 375°F (190°C).
Pat the rack of lamb dry with paper towels.
In a small bowl, mix together the salt, pepper, cumin, oregano, garlic powder, thyme and coriander.
Rub the spice mixture onto the rack of lamb and place it in a roasting pan.
Drizzle with the olive oil and roast in the preheated oven for 25-30 minutes, or until the lamb is cooked to your desired doneness.
Meanwhile, in a small bowl combine the cilantro, mint, lemon juice, and a pinch of salt.
When the lamb is cooked, remove from the oven and let rest for 10 minutes before serving.
Serve with the cilantro-mint sauce.
