Spice-Crusted Roast Rack of Lamb with Cilantro-Mint Sauce

Ingredients

  • 1 rack of lamb
  • 3 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon ground coriander
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons fresh lemon juice

Directions

  1. Preheat oven to 375°F (190°C).
  2. Pat the rack of lamb dry with paper towels.
  3. In a small bowl, mix together the salt, pepper, cumin, oregano, garlic powder, thyme and coriander.
  4. Rub the spice mixture onto the rack of lamb and place it in a roasting pan.
  5. Drizzle with the olive oil and roast in the preheated oven for 25-30 minutes, or until the lamb is cooked to your desired doneness.
  6. Meanwhile, in a small bowl combine the cilantro, mint, lemon juice, and a pinch of salt.
  7. When the lamb is cooked, remove from the oven and let rest for 10 minutes before serving.
  8. Serve with the cilantro-mint sauce.
