Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless chicken breasts, cut into cubes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups diced tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the chicken and onion, and cook until the chicken is golden and the onion is softened, about 5 minutes.
  3. Add the garlic and cook for an additional minute.
  4. Add the tomatoes, oregano, and basil, and season with salt and pepper, to taste.
  5. Bring to a simmer and cook until the tomatoes have softened and the chicken is cooked through, about 10 minutes.
  6. Stir in the parsley and serve.
