Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (1 stick) butter, softened
1/2 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cardamom
Directions
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the butter and sugar with an electric mixer until light and fluffy.
Add the egg and vanilla and mix until combined.
Add the dry ingredients to the wet ingredients and mix until a dough forms.
Divide the dough in half and wrap each half in plastic wrap. Refrigerate for at least 2 hours.
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
On a lightly floured surface, roll out one of the pieces of dough to a 1/4-inch thickness.
Using a cookie cutter, cut out the desired shapes and place them on the prepared baking sheet.
Repeat with the remaining dough.
Bake for 10-12 minutes, or until golden brown.
Remove from oven and let cool on a wire rack.

Speculaas are traditionally served during the Dutch holiday of Sinterklaas.
The spices used to make speculaas can vary, but cinnamon, cloves, nutmeg, and cardamom are always used.
Speculaas cookies can be made in all sorts of shapes, including animals, flowers, and people.
