Ingredients

  • 1 cup of soy milk
  • 1 tablespoon of lemon juice
  • 1 cup of all-purpose flour
  • 2 tablespoons of sugar
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 tablespoon of vegetable oil

Directions

  1. In a medium bowl, mix together the soy milk and lemon juice. Let the mixture sit for 10 minutes to curdle.
  2. In a separate bowl, mix together the flour, sugar, baking powder, and salt.
  3. Add the soy milk mixture to the dry ingredients and whisk until just combined.
  4. Heat a nonstick skillet over medium-high heat. Add a teaspoon of vegetable oil to the skillet and swirl to coat.
  5. Spoon 1/4 cup of batter onto the skillet for each pancake. Cook the pancakes for 2-3 minutes, until the edges start to turn golden brown.
  6. Flip the pancakes and continue cooking for 1-2 minutes, until golden brown on the second side.
  7. Transfer the cooked pancakes to a plate and repeat with the remaining batter.
