Ingredients
1 cup of soy milk
1 tablespoon of lemon juice
1 cup of all-purpose flour
2 tablespoons of sugar
1 teaspoon of baking powder
1/4 teaspoon of salt
1 tablespoon of vegetable oil
Directions
In a medium bowl, mix together the soy milk and lemon juice. Let the mixture sit for 10 minutes to curdle.
In a separate bowl, mix together the flour, sugar, baking powder, and salt.
Add the soy milk mixture to the dry ingredients and whisk until just combined.
Heat a nonstick skillet over medium-high heat. Add a teaspoon of vegetable oil to the skillet and swirl to coat.
Spoon 1/4 cup of batter onto the skillet for each pancake. Cook the pancakes for 2-3 minutes, until the edges start to turn golden brown.
Flip the pancakes and continue cooking for 1-2 minutes, until golden brown on the second side.
Transfer the cooked pancakes to a plate and repeat with the remaining batter.

You can substitute the all-purpose flour for gluten-free flour if desired.
You can top your pancakes with syrup, fresh fruit, or nut butter.
