Ingredients
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 pound ground beef
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 (14.5 ounce) can diced tomatoes, with juice
- 1 cup shredded cheddar cheese
- 1/4 cup sliced black olives
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- 1/2 cup salsa
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook until onion is tender, about 5 minutes.
- Add the ground beef to the skillet, and cook, stirring to break up the meat, until beef is browned, about 5 minutes. Drain off any excess fat.
- Stir in the chili powder, cumin, oregano, paprika, salt, and pepper. Add the black beans, corn, and tomatoes with juice. Bring to a simmer, then reduce heat and simmer uncovered for 10 minutes.
- Spread beef mixture into a 9x13 inch baking dish. Sprinkle with cheddar cheese, olives, and cilantro. Top with dollops of sour cream and salsa.
- Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
