Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 pound ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 (14.5 ounce) can diced tomatoes, with juice
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced black olives
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream
  • 1/2 cup salsa

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and cook until onion is tender, about 5 minutes.
  3. Add the ground beef to the skillet, and cook, stirring to break up the meat, until beef is browned, about 5 minutes. Drain off any excess fat.
  4. Stir in the chili powder, cumin, oregano, paprika, salt, and pepper. Add the black beans, corn, and tomatoes with juice. Bring to a simmer, then reduce heat and simmer uncovered for 10 minutes.
  5. Spread beef mixture into a 9x13 inch baking dish. Sprinkle with cheddar cheese, olives, and cilantro. Top with dollops of sour cream and salsa.
  6. Bake in preheated oven for 20 minutes, or until cheese is melted and bubbly.
