Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 cups vegetable broth
  • 2 cups water
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (4 ounce) can green chiles, diced
  • 2 corn tortillas, cut into thin strips
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup frozen corn
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup diced avocado
  • 1/4 cup crumbled Cotija cheese

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook, stirring often, for about 5 minutes.
  2. Stir in the chili powder, cumin, and cayenne pepper and cook for 1 minute.
  3. Add the vegetable broth, water, tomatoes, and chiles and bring to a boil. Reduce heat and simmer for 10 minutes.
  4. Add the tortilla strips and season with salt and pepper. Simmer for 5 minutes.
  5. Stir in the corn and simmer for 5 minutes. Add cilantro and adjust seasonings to taste.
  6. Ladle the soup into bowls and top with avocado, Cotija cheese, and additional cilantro.
