- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 2 cups vegetable broth
- 2 cups water
- 1 (14.5 ounce) can diced tomatoes
- 1 (4 ounce) can green chiles, diced
- 2 corn tortillas, cut into thin strips
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup frozen corn
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced avocado
- 1/4 cup crumbled Cotija cheese
Directions
- Heat the oil in a large pot over medium heat. Add the onion and garlic and cook, stirring often, for about 5 minutes.
- Stir in the chili powder, cumin, and cayenne pepper and cook for 1 minute.
- Add the vegetable broth, water, tomatoes, and chiles and bring to a boil. Reduce heat and simmer for 10 minutes.
- Add the tortilla strips and season with salt and pepper. Simmer for 5 minutes.
- Stir in the corn and simmer for 5 minutes. Add cilantro and adjust seasonings to taste.
- Ladle the soup into bowls and top with avocado, Cotija cheese, and additional cilantro.
