Ingredients

  • 1 cup ripe persimmons, pureed
  • 1 cup dates, pureed
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon sea salt
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • ½ cup oats

Directions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, mix together the persimmon puree, date puree, baking soda, cinnamon, and sea salt.
  3. Add the coconut oil, vanilla extract, almond flour, and oats and mix until combined.
  4. Using a spoon, drop the dough onto a parchment-lined baking sheet.
  5. Bake for 15-20 minutes, or until the cookies are golden brown.
  6. Remove from the oven and let cool before serving.
