Carrie’s Easy Pineapple Cool Cake

Ingredients

• 1 package of yellow cake mix
• 1 can of pineapple tidbits
• 1/3 cup of vegetable oil
• 3 eggs
• 1/2 cup of sugar
• 1/4 teaspoon of ground cinnamon
• 1/4 teaspoon of ground nutmeg
• 1/2 cup of chopped pecans
• 1/2 cup of cream cheese
• 1/2 cup of butter
• 2 cups of powdered sugar
• 1 teaspoon of vanilla extract

Directions

1. Preheat oven to 350°F. Grease and flour a 9-inch round cake pan.
2. In a large bowl, combine the cake mix, pineapple, oil, eggs, sugar, cinnamon, and nutmeg. Beat until the ingredients are well blended.
3. Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center of the cake comes out clean.
4. Allow the cake to cool completely before frosting.
5. To make the frosting, combine the cream cheese, butter, powdered sugar, and vanilla extract. Beat until light and fluffy.
6. Spread the frosting over the cooled cake and sprinkle with chopped pecans.
